Cheeseburger Egg Rolls

This might sound strange but as it turns out, a golden crisp egg roll stuffed with beef, cheese, lettuce, pickles, and mayo may just be one of the most delectably genius things we have ever made. This playful appetizer is reminiscent of everything you love about fast food but unlike a fast food cheeseburger fix you actually know what's going into it. You can find fresh egg roll wrappers in the refrigerated section of most grocery stores. 

Ingredients

HAMBURGERS 

  • 1 pound 85% lean ground beef 
  • 4 teaspoons Worcestershire sauce 
  • 1 teaspoon kosher salt 
  • 1 teaspoon black pepper 
  • 1 teaspoon garlic powder 
  • 1 teaspoon onion powder Cooking spray

EGG ROLLS

  • 4 cups thinly shredded romaine lettuce 
  • 1/2 cup finely chopped dill pickles 
  • 3 tablespoons mayonnaise 
  • 2 teaspoons yellow mustard 
  • 1 large egg, lightly beaten 
  • 1 tablespoon water 
  • 8 (6x6-inch) egg roll wrappers 
  • 8 American cheese slices, halved 
  • 6 cups peanut oil 

SWEET AND SOUR KETCHUP

  • 2 teaspoons cornstarch 
  • 1 cup plus 
  • 2 tablespoons water, divided 
  • 3/4 cup ketchup 
  • 1/2 cup apple cider vinegar 
  • 1/2 cup granulated sugar 
  • 3 tablespoons soy sauce 
  • 2 teaspoons kosher salt

How to Make It

Step 1

Prepare the Hamburgers: Gently mix together ground beef and next five ingredients through onion powder in a bowl.
Shape mixture into 3 (1/2-inch-thick) patties.
Heat a large cast iron skillet or grill pan over medium-high.
Coat with cooking spray.
Add patties to pan and cook to desired degree of doneness, about two to three minutes per side for medium.
Remove patties from skillet.
Let stand until cool enough to handle.

Prepare the Egg Rolls:
Break Hamburger patties into 1/2 inch chunks.
Toss together Hamburger chunks, pickles, lettuce, mayonnaise, and mustard in a bowl till just combined.

Whisk together egg and water in a small bowl.
Place four of the egg roll wrappers on a work surface with the point of one corner of each facing toward you.
Place 1/2 cup Hamburger mixture in center of each wrapper;
Shape into a 4x1 inch horizontal log.
Top each with one cheese slice half.
Fold bottom point of each wrapper over filling.
Fold one sides over filling.
Brush remaining top point with a small amount of the egg wash.
Roll up egg roll from bottom to seal.
Lightly dust a tray with cornstarch.
Place filled egg rolls on tray.
Repeat process with remaning egg roll wrappers, Hamburger filling, cheese slice halves, and egg wash.
Cover with plastic wrap, and chill until ready to fry.

When ready to fry egg rolls, heat oil in a large stockpot or Dutch oven over high to 360°F.
Add egg rolls
Cook till golden brown on all sides three to four minutes.
Transfer to a plate lined with paper towels to drain.
Serve with Sweet and Sour Ketchup.

Prepare the Sweet and Sour Ketchup
Stir together cornstarch and two tablespoons of the water in a small bowl till cornstarch dissolves. Whisk together cornstarch mixture, vinegar, ketchup, sugar, soy sauce, salt, and remaining one cup water in a saucepan.
Bring to a boil over medium-high.
Reduce heat to medium, and simmer, stirring occasionally, till slightly thickened two to three minutes.
