#5.Chipotle Popcorn Chicken



Ingredients

  • 2 lb boneless skinless chicken breast (910 g)
  • 2 cups buttermilk (480 mL)
  • 7 oz chiles in adobo sauce (200 g), 1 can
  • 2 cups panko breadcrumbs (100 g)
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon smoked paprika
  • oil for frying
GARNISH
smoked paprika to taste

  • Cut chicken breast into bite sized pieces and place them in a medium sized bowl.
  • Pour buttermilk and can of Chiles over the chicken making sure to get all of the Adobo sauce out of the can. Mix well to incorporate.
  • Cover and let marinate in the refrigerator for 2-4 hours.
  • In a separate bowl mix together Panko bread crumbs, chili powder, pepper, salt and paprika.
  • Remove chicken from the refrigerator and dredge the pieces in the bread crumb mixture for an even coat.
  • Fry them in 350˚F (180˚C) oil till they are crispy and golden brown about 2 minutes.
  • Drain on paper towels.
  • Garnish with an additional sprinkle of smoked paprika and serve.

  • 2 chicken breasts, cubed
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 3 cloves garlic minced
  • ½ teaspoon ground ginger
  • 1 cup flour (125 g)

  • ⅓ cup honey (115 g)
  • ½ cup Siracha (155 g)
  • 2 tablespoons soy sauce
  • 3 teaspoons lime juice

  • Cut chicken breasts into cubes.
  • In a medium-sized bowl, combine chicken, pepper, salt, garlic, and ginger. Toss till evenly coated.
  • Place flour and beaten eggs into two separate bowls. Roll each piece of chicken in flour then dip each piece into the eggs till fully covered. Dip into flour one last time for another coat.
  • Heat oil to 375°F (190°C) in a large pot over medium-high heat.
  • Fry the coated chicken pieces, in batches till golden and cooked through about 10 minutes.
  • In a saucepan over medium heat, combine butter, Sriracha, honey, soy sauce and lime juice.
  • Add chicken and stir till completely covered.
  • Serve with ranch blue cheese or honey!

  • 8 chicken drumsticks
  • 8 ½ cups vegetable oil (2 L)

HERBS AND SPICES MIX

  • 2 teaspoons salt
  • ½ tablespoon dried thyme
  • ½ tablespoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon celery salt

  • 2 tablespoons paprika

  • Beat the eggs into the buttermilk.
  • Add the chicken pieces to the buttermilk mixture and chill for an hour.
  • In a large mixing bowl mix the flour with all the herbs and spices.
  • Coat the soaked chicken pieces in the Herbed flour mixture, shaking off any excess.
  • Heat oil in a large sauce pan to 325˚F (170°C) then turn to low heat.
  • Fry the chicken in batches for 15 minutes until the chicken is cooked and the skins turn golden brown.
  • Transfer to a paper towel-lined plate.

  • Season steak with a pinch of salt and pepper then cut steak into bite-size pieces.
  • In a large bowl combine all batter ingredients. Whisk till all ingredients are mixed through.
  • Preheat about an inch (2 cm) of oil to 350˚F (180˚C) into a heavy high-sided skillet or pan.
  • In a medium bowl add flour and salt. Place steak into the flour, then batter and then into the flour again.
  • Lower the steak bites into the hot oil being careful not to overcrowd the pan.
  • Cook each side for 4 minutes or till golden brown.
  • Transfer it onto a drying rack and season with salt.
  • Discard the oil on the pan but leave some oil for the gravy. In the same bowl add flour and salt, milk and mix till thicken.
  • Dip the steaks into the gravy.

BEER BATTER

  • 1 egg
  • ½ cup beer (100 mL)
  • ¾ cup plain flour (100 g)
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 chicken breast
  • salt, to season
  • pepper, to season
  • oil, for frying
  • ¼ cup ketchup (60 mL) to serve
  • 4 oz chip (115 g) to serve

  • Pour the crisps into a Ziplock bag and smash into pieces using a rolling pin.
  • Pour into a bowl and set aside.
  • Preheat a pot of oil to 350˚F (180˚C)
  • Mix all the beer batter ingredients in a bowl till combined careful not to overmix.
  • Cut the chicken into strips and coat well in the batter, then the crisp coating.
  • Fry for about 2-3 minutes on each side or till chicken is golden brown and cooked through.
  • Transfer to some paper towel to soak up some of the excess oil.
  • Serve with chips your favorite sauces and leftover beer.
